Taco Dinner 🌮

I recently made Tacos for dinner and had posted it on my Instagram story. I don’t make tacos often, but when I do, I go all out. This time around, I made my take on slow-cooked chicken tinga. I made a whole taco bar for my family, including quesadilla’s, Mexican street corn, lots of cheese and veggies. I posted pictures of the dinner on my Instagram story and I was amazed at how many people had replied saying they wanted the recipe. I decided to dedicate a whole blog post on taco night because there are so many recipes I want to share with you.

Chicken Tinga

Ingredients

2 packages chicken breasts (about 6-7 chicken breasts)

1 onion - peeled, but kept whole

1 whole garlic bulb

3 bay leaves

10 cups chicken broth

3 cups water

2 dried habanero peppers

2 dried chile peppers

1 jalapeno

salt and pepper to taste

Directions

Start by putting the chicken in a large pot over medium-low heat. Add the whole onion and garlic, bay leaves, peppers, and the chicken broth and water. Cover it halfway and let it simmer for 1 hour. After 1 hour, the onion and garlic should be soft. Take all of the bay leaves, peppers, onion and garlic out and put it into a blender with some of the chicken broth. Blend until a smooth loose consistency. Add that back into the pot and mix everything up. Now, cover the pot halfway and let that sit for 3 hours, checking on it occasionally. After 3 hours, the chicken should basically shred by the touch of a spatula. Salt and pepper to taste and serve!

Guacamole

Ingredients

3 avocados

1/2 onion - minced

1/2 tomato - chopped

1 tbsp hot sauce

1 lemon - juiced

1 lime - juiced

Salt and pepper to taste

Directions

Mash the avocados. I like my guacamole on the chunkier side, but do whatever you prefer. Add the minced onion, chopped tomato and combine. Add the hot sauce, lemon and lime juice, and salt and pepper. Mix. Garnish with cilantro and serve!

Mexican Street Corn

Ingredients

1 can corn - unsalted

1/2 cup sour cream

1/4 cup mayonnaise

1 tsp paprika

1/4 cup queso fresco - crumbled

Salt and pepper to taste

Directions

Combine everything together. Garnish with Paprika and voila!
