Pasta with Peas

Hi Everyone! I’m sorry it’s been awhile since I’ve posted a recipe. I am currently on Christmas break and have been cooking up a storm! I’m so excited to share all of my new recipes. PLUS, a new section of the website will be added featuring lifestyle articles like sustainable living/cooking, kitchen essentials, and entertaining!

Ingredients

1 onion, minced

2 1-lb bags frozen peas

pasta of choice (I recommend rigatoni)

1/4 cup white wine

salt

good quality olive oil

Instructions

Start by boiling water for the pasta. Next, add a very generous amount of olive oil to a separate pot and add the onions. Try to avoid getting color on the onions, but rather allow the onions to become translucent. Add all of the peas and let them defrost. Add the white wine to the peas. When the water is boiling, add a very generous amount of salt to the water because there will not be any salt added beyond the pasta water. After the pasta has been in the water for a few mins, take ladles of pasta water and add it to the peas, enough to just cover the peas. Let the peas come to a low boil. Take half of the peas mixture and blend it. Add it back into the pot. Let the peas come back to a simmer. Take out the pasta two mins early and add it into the peas. Let the pasta finish cooking in the peas and let the pea mixture thicken into a sauce. Plate the pasta and peas and garnish with parmesan and good quality olive oil. Enjoy!
