Summer Citrus Spritzer
A few days ago, I had visited my local farmers market and bought an array of random produce that looked appealing. I completely forgot about them, and yesterday I opened the fridge and realized I had to use them before they went rotten. It was the final countdown! I took out the lemons, grapefruit, cucumbers, mint, and limes and decided to make a rephrasing, spa-like drink!
In my opinion, a refreshing drink truly epitomizes summer in its glory. I mean, what’s better than sitting beside the pool with a a delicious, cold drink, with the sun beaming on your face? Here is my version of a Summery Citrus Spritzer:
Ingredients
2 lemons - zested and juiced
2 limes - zested and juiced
1 large grapefruit - zested and juiced
1 bunch of mint - half chopped finely + some for garnish
2 mini Persian cucumbers - peeled & chunked
16 oz sparkling water
1/2 cup turbinado sugar
Directions
Zest and juice the lemons, limes, and grapefruit. Reserve half of the zest off to the side.
With a mortar and pestle, muddle the cucumbers with the juice of the lemons, limes, and grapefruit. Add half the zest and muddle that in until you begin to smell the fragrance of the citrus.
Drain the muddled citrus and cucumber through a fine strainer and smash it down with a fork to get all of the juice out from the mixture through the strainer.
In a small pot, mix the sugar and 1 cup of water together. Bring it to a simmer and add the chopped mint (leaving some for garnish) and the remainder of the citrus zest. Place the top on the pot and let that infuse for ten minutes.
Add ice into a pitcher and pour in the citrus mixture. Add in the infused simple syrup and top it with sparkling water and some sprigs of mint.
