Simple Kale Salad

This is one of the easiest salads you could make, and the best part about using kale is that it doesn’t get soggy. In fact, the longer you let the kale “marinate” in the dressing, the tastier it will be. The most important thing when using kale in a salad, is to massage it with a little olive oil before you assemble it. This makes it much tastier and more enjoyable to eat!

Ingredients

For the Salad:

4 cups baby kale

1/4 cup parmesan

1 tbsp extra-virgin olive oil

For the Dressing:

1/4 cup extra-virgin olive oil

1 garlic clove (choose a smaller garlic clove if you don’t like the flavor) - finely minced

1 tbsp salt

1/2 tsp pepper

Directions

Start by massaging the kale with the olive oil for about 1 minute, or until the leaves become a more vibrant shade of green. Mix the parmesan into the kale. For the dressing, mince your garlic clove and whisk it vigorously with the olive oil and salt and pepper until fully combined. Toss the dressing in a little at a time. Enjoy!
