Citrus Salad with Arugula and Burrata
For the Salad:
2 cups arugula
1 cup beets - diced
1/2 cup heirloom tomatoes - halved
1-2 oranges - peeled and sliced (Use whatever oranges you prefer; I like blood oranges, mandarins, and navel)
1 ball burrata
For the Dressing:
3 tbsp olive oil
2 tbsp white balsamic
salt and pepper
Directions:
Dice the beets, half the tomatoes, and peel and slice the oranges. Arrange them on top of the arugula. Top the salad with the burrata. Vigorously whisk the balsamic, olive oil, and salt and pepper. Pour it over the salad and toss. Enjoy!
