French Onion Soup

There is not much to say about this recipe except for that it is absolutely I.N.C.R.E.D.I.B.L.E.

Ingredients

8 yellow onions - sliced into 1-inch pieces

4 tbsp unsalted butter

3 cups beef stock

1 tbsp chicken bouillon

3 cups water

1 baguette - sliced

1 block of gruyere - grated

3 tbsp all-purpose flour

2 bay leaves

salt and pepper

Directions:

Once all of your onions are sliced, melt the butter in a large pot and toss in the onions. Generously salt the onions (this is key because it allows the onions to sweat which gets them very soft and caramelized!). Place a top on the pot and don’t touch the onions for ten minutes. After ten minutes, stir and place the top back on for another ten minutes. Repeat until a brown film begins to form on the bottom of the pot. Once you see the brown film, take a wood spatula and scrape it off as best you can. Mix it in with the onions until it dissolves and the onions turn into a brown color. Add in your flour and combine. Once the flour is completely mixed in with the onions, add in your beef stock. Place the top on the pot and bring to a low simmer. In the meantime, mix your chicken bouillon with 1 cup of the water until it is completely homogenous. Pour the chicken bouillon and water mixture into the pot along with the remaining two cups of water. Toss in the bay leaves as well and stir to combine. Once again, place the top on the pot and bring to a simmer. In the meantime, grate all of your gruyere, slice your bread, and heat the oven to 400 degrees. When the soup reaches a low simmer, turn the heat off. Lay the slices of baguette on the top of the soup. Take a spoon and flip the slices of baguette so that the side that was in the soup is now facing up. Add all of your gruyere to cover the whole soup. Place the pot in the oven and allow the cheese to melt. When the cheese has melted, put the oven on the broil setting and keep a close eye on the soup because it browns very quickly. When it’s golden brown, take the pot out of the oven. Serve the soup in bowls, making sure each serving gets a piece of bread. Enjoy!!!!
