Caprese Chicken

Ingredients

5 chicken breasts

3 cups cherry tomatoes

1 ball mozzarella

basil

salt and pepper

EVOO

Directions

For the tomatoes:

Preheat oven to 425 degrees. Add tomatoes to an oven safe pan (not a sheet pan, the juices will spill out) and drizzle generously with olive oil and salt and pepper. Bake in oven for about 25 mins, or until roasted and the juices have released.

For the chicken:

Salt and pepper your chicken breasts on both sides. Heat a pan on medium-high heat. Add olive oil once pan is hot and cook your chicken for about 3 mins per side, depending on how thick the chicken is. Once golden brown on both sides, take off the heat.

Assemble:

When the tomatoes are done, use a spatula to smush them. Add your chicken back into the pan over a low flame. Top your chicken with the roasted tomatoes and some mozzarella. Cover the pan to let the mozzarella melt. Transfer to a plate and garnish with torn basil. Enjoy!
